How to Make Chicken Scrolls

Step 1
Place your 4 sheets of pastry on your work top.
Step 2
Brush egg wash on the edge of two sheets and overlap the other sheets by one inch to make two big sheets of pastry.
Step 3
Put the carrot, onion, spinach, cheese. chicken, salt & pepper, herbs and garlic in a bowl and mix well.
Step 4
Spread the mixture evenly over the two sheets as per the photo leaving a gap of about 2 inches at the top.
Step 5
Brush egg wash on the gap at the top. Then roll the pastry from the bottom upwards. (like making sushi)
Step 6
Now cut each roll into 8 equal slices using a sharp knife, For best results (especially in Cairns) Chill the rolls for about 1/2 hour before cutting them
Step 7
Place on the scrolls on 2 lined baking trays and brush all over with egg wash.
Step 8
Bake for 30 mins at 220 degrees of until pastry is golden brown.

To serve / Optional

sprinkle of your favorite herbs and crushed garlic, optional

Ingredients

  • 1 large grated carrot
  • 1 grated / finely chopped onion
  • 1 pack of frozen spinach (about 200-250g - defrost & squeeze out the moisture)
  • 800g of mince chicken
  • 250g of grated cheddar cheese
  • 4 sheets of frozen puff pastry
  • pinch of salt and pepper
  • egg wash (made from 1 egg yolk and dash of milk)
